辣椒中辣椒素和二氢辣椒素的高效液相色谱分析

辣椒属果实中含有的刺激性成分（导致“辣”）统称为辣椒类。辣椒中的辣椒素和二氢辣椒素构成了80-90%的辛辣成分；这些化合物目前广泛应用于医药产品和保健食品中。众所周知，辣椒素以不同的量存在于辣椒果实的各个部位。本实验测定了四种辣椒（辣椒、塞拉诺辣椒、芬格辣椒和哈瓦那辣椒）果皮、种子和胎盘中的类辣椒素含量。表1.辣椒各部位的辣椒素和二氢辣椒素含量Application Note742025H 2/4Application Note Analysis of Capsaicin an d D Dil ihydrocapsaicin in Capsicum Introduc t ion The pungent components (which are responsi b le for t h e ‘hotness')conta i ned i n the fru it of the genus Capsicum a r e collectively refe r red to as the Capsaicinoids. In T able 1 the Capsa i c i n and Di h ydrocapsa i cin content in the eac h Capsicum sample (wet we i g h t) are shown. I t is known that the contents are ve r y different depending on each p art and for the al l capsicum ， Placenta part contai n s Capsaici n and Dihydrocapsaicin the most.
