Stable carbon isotope ratios are used widely for the authentication of foodstuffs, especially for the detection of added cane sugar in fruit juices, spirits and honey. The major deficiency of stable carbon isotope analysis is that it cannot be used to detect the addition of beet sugar syrups to C3 crops, as the beet plant also uses the Calvin photosynthetic pathway. However, the addition of commercial sweeteners such as beet medium invert syrup can be detected by isotope ratio mass spectrometry if the abundance of deuterium in the sugars is determined.

Rice samples cultivated in the USA, Europe and Basmati regions have been analysed using Isotope Ratio Mass Spectrometry (IRMS) and Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Nine key variables (δ13C, δ18O, boron, holmium, gadolinium, magnesium, rubidium, selenium and tungsten) were identified by canonical discriminant analysis as providing the maximum discrimination between rice samples from these regions. High levels of boron (>2500 ppb) were associated with rice samples from America and notably high levels of holmium were found in rice samples from the state of Arkansas. European rice samples generally contained relatively high levels of magnesium and Indian/Pakistani samples were characterised by relatively low oxygen-18 ( 18O) abundance.

Palm sugar was originally made from the sugary sap of the Palmyra palm or the date palm. Now it is also made from the sap of the sago and coconut palms and may be sold as "coconut sugar." When the palms are 15 to 20 years old they start flowering and it is only then that they yield the sap from which palm sugar is made. The sap flows when the flower stem is tapped. Palm sugar is analogous to maple syrup in that it is a premium product derived from tree sap and has a high sugar content.Consequently, it is potentially subject to dulteration with cheaper sources of refined sugar such as cane sucrose. It is common practice to add small amounts of cane sugar to palm sugar during its production .The cane sugar might be used to ‘seed’ the crystallisation of the palm sugar crystals, but there is an a temptation to add excessive cane sugar.

Authentic samples of commercially produced organic and conventionally grown tomatoes were collected and analysed for their δ15N composition in order to assemble datasets to establish if there were any stematic differences in nitrogen isotope composition due to the method of production. The tomato dataset show that the different types of fertiliser commonly used in organic and conventional systems result in differences in the nitrogen isotope composition of this crop. A mean δ15N value of +8.1‰ was found for the organically grown tomatoes compared with a mean value of -0.1‰ for those grown conventionally.
