凝结芽孢杆菌（Bacillus coagulans），革兰阳性，属于硬（或厚）壁菌门。凝结芽孢杆菌分类学上属于芽孢杆菌属，细胞呈杆状，革兰氏阳性菌，端生芽孢，无鞭毛。分解糖类生成L-乳酸，为同型乳酸发酵菌。最适生长温度为45-50℃，最适pH为6.6-7.0。
